Las Palmas farm is located in the department Palestina, in the southern part of the Huila region, where the Central and Eastern Andes Mountains converge. Elfren Echeverry has been surrounded by coffee since he was born. His family has always been involved in coffee cultivation. Following his father’s tradition, Elfren acquired this farm three years ago. He saw this as an opportunity to increase the production of exotic varieties, such as pink bourbon, geisha, and others; but also to experiment with innovative processes, such as natural or different types of anaerobic fermentation (lactic, alcoholic, with added fruits as pineapple or infusions).

This farm got its name from the natural banana palm forest that surrounds the farm and serves as a natural shade protector for the coffee trees growing below. Bananas are also a great sub-agricultural product that Elfren family can commercialize next to coffee. In addition, the farm is surrounded by giant and strong guadua trees. These are not only excellent building materials, but most importantly regulate and store the water level in watersheds, conserve biodiversity and contribute to the purification and regulation of the environment here. The richness of the ecosystem makes Elfren’s family careful and committed to preserving nature, as it brings them many environmental benefits.
This lot has two exceptional characteristics: it is Pink Bourbon varietal processed using natural fermentation. The result is a complex cup with flavors of tropical fruit salad, caramel, honey sweetness, and juicy acidity. Coffee was collected in selective manner, mean only ripped cherries were picked. Then it undergoes a fermentation process in bags immediately after harvesting the cherries during 24hours. After this first fermentation, cherries are dried on patios.

v60 : 15 gr in ~ 250 gr water ~ 91 C ~ extraction time : 2 min + 30 sec.

espresso: 19 gr in ~ 38 gr out ~ 92 C ~ extraction time : 28 – 30 sec.
