Elegant and clean, with notes of red grapes, cacao and sweet vanilla. Velvety mouthfeel and sweet aftertaste.
Pacas family has been closely linked to coffee cultivation in El Salvador for over 150 years and across five generations – especially in the Apaneca-Ilamatepec region.
As diamonds are special, what makes Diamante unique is its composition—Rume, Kenya, Bernardina, and Gesha.
These varieties are among Café Pacas ‘Incunables’ – unique coffees of the highest quality. The coffees come from different farms owned by the Pacas family in the Apaneca Ilamatepec coffee region. Τhe volcanoes Santa Ana, Cerro Verde, and Izalco dominate, are shaping the microclimate and soil.
This blend contains not only well-known varieties, but also Bernardina. In 2012, the manager of a farm separated an unusual coffee plant that caught his attention due to the special flavor of its cherries. After genetic analyses, it was recognized as a new variety and named Bernardina, after its discoverer. In 2026, Café Pacas achieved success in two categories at the Cup of Excellence with this variety.
Café Pacas manages 16 farms with a total of around 500 hectares of coffee-growing land, spread across the fertile slopes of the Santa Ana and Cerro Verde volcanoes in western El Salvador.
A central element of their quality strategy is the family’s own processing mill, Beneficio Vivagua, where all coffees are processed and refined. From plant cultivation to final processing and export, every step of the value chain is managed in-house. This full control ensures consistent quality, traceability, and transparency.
